Strawberry Aquafaba Mousse

Is love in the air for you? Well I hope you fall in love with my Vegan Strawberry Mousses perfect for valentines day and any time you want to spoil yourself. This is a super simple recipe which you can make ahead to take away all the stress on the big day. It is also a healthier option compared to other treats as it contains no refined sugars so you don’t have to feel guilty at all! Carry on reading for the full recipe.

200g Strawberries
60ml Maple Syrup
1/2tsp Vanilla Extract
150g Coconut Cream
1 tbsp Water
3/4 tsp Agar Powder
80g Aquafaba
1/8 tsp Cream of tartar (or just a pinch!)

Begin by blending your strawberries, maple syrup and vanilla together in a blender until completely smooth. This will have the main influence on the taste so make sure to use ripe and sweet strawberries and a good quality vanilla essence if available. Put this aside in a bowl for later.

Next, heat up your coconut cream on a low heat in a small pan. Mix your agar powder and water together, then add to the coconut cream and bring to a simmer. As soon as it begins to simmer, take off the heat and add to your strawberry mixture.

Drain your chickpeas and reserve the liquid, also known as aquafaba. You can keep your chickpeas for a later date as they keep great in the fridge for 3-4 days. If you’re struggling on what to do with them I have a hummus recipe and chickpea and clementine recipe down below. Measure out the amount of aquafaba needed and then add your cream of tartar. Whisk the aquafaba and cream of tartar using a high speed electric whisk until peaks begin to form (almost like make egg-free meringues).

Once your aquafaba is ready, fold in your strawberry and coconut mixture. Be sure to be very gentle at this stage because you want to make sure you don’t loose any air out of the mixture otherwise it won’t have that mousse like consistency.

Place the mixture into any ramekin you desire. I chose to put it into small glass as I think the colour is so pretty that I wanted to make it centre of attention! Place in the fridge and allow them to set for at least 8 hours (or overnight). They tend to last for up to 3 days so you can easily make these gorgeous puddings ahead and then bring them out when required.

I decorated mine with fresh strawberries, coconut chips and little candied love hearts but fell free to serve however you like! You could also top it with dairy-free whipping cream and chocolate shavings to satisfy that classic combination of strawberries, chocolate and cream.
