What I Eat In A Day #1 – Hungover and Travelling Home

Hello there and welcome to my first ‘What I Eat In A Day’ post. I wanted to start with something super realistic and relatable to show you I ain’t all about the glamorous food life and some days call for some very easy but very tasty food. So yeah as you can gather, I was very hungover on this day! I had spent the previous night celebrating my friend’s birthday in Manchester which was awesome and now I was feeling it! However as always put on a brave face. Whilst in Manchester, I stopped at my boyfriend’s uni accommodation so a lot of this food is very student friendly as it comes straight from the fridge of a uni student.

My day started feeling groggy and not wanting to do anything that would require moving my head too much so we decided that cereal was the way forward. I personally don’t actually have cereal that much myself but my boyfriend loves it and to be fair I realised how nice it is sometimes as a quick and easy breakfast. I personally would have preferred it with soya or almond milk but I won’t complain when my boyfriend is providing. I definitely prefer fruity cereal to chocolatey cereal as somehow it makes me feel slightly healthier and that I’m giving myself an alright breakfast. Some cereal actually has loads of fortified vitamins and costs way less than vitamin tablets so if your a student wanting to boost your vitamins, look out for fortified cereals – you’ll be surprised!!

For lunch we had some leftover chilli. Chilli is such a good student staple and such a good thing to batch cook which is what my boyfriend does a lot. This chilli had Quorn mince, red kidney beans, onion, garlic, mushrooms, courgette and sweetcorn (I absolutely love sweetcorn in chilli!). We flavoured it with a tin of chopped tomatoes, smoked paprika, cumin, chilli powder and coriander. This is such a simple and easy dish to cook as it’s all pot and and cooked together. I will do a proper recipe soon as this is such a brilliant student meal.

As I was travelling back on the coach and had a big lunch, I wanted something small and easy to eat. I decided to go for a classic Tesco Meal Deal. I’ll be honest I think there are better lunch/meal deals out there for value but I do think that Tesco have a good selection of sandwiches. It’s just a shame that they haven’t yet included their Wicked Kitchen Range in the meal deal option as they would open up vegan options. I went for a cheddar ploughman’s sandwich, prawn cocktail crisps (my favourite) and a tropicana berry boost juice. I got the apple from my boyfriend’s apartment just don’t tell him that!
