What I Eat In A Day #3 – Isolation Edition

Hope you’re all doing well! With the amount that people can do for fun, I’ve turned to a lot of food blogs and baking to keep me entertained! I decided I would do my own What I Eat In a Day whilst in isolation to hopefully give you guys some inspiration and I’ve got a few more coming haha!

To start my day I had some chocolate and peanut butter porridge with some juice on the side. I’ve been having porridge most mornings as it’s such a classic to go to and really easy to store in the cupboard. I like to mix up the flavours by adding fruit, cacao powder, peanut butter, jam – the list goes on! I’ve also been trying to up my fruit intake so I have been having a glass of juice every morning with my breakfast.

For lunch I had a sandwich with a side of more fruit – grapes! I made a cheese and tomato sandwich with a little bit of mayo which is one of my favs. I’ve also been having a lot of sandwiches/things on toast as you can be very versatile and switch things up without it getting boring using up the things you’ve got!

I count myself lucky that when this all started I already had lots of pasta in my cupboard! Thankfully the supermarkets seem to be more stocked up now as people are starting to stock pile less. For my dinner I had pasta in a tomato sauce using up the brocolli and carrots I had in the bottom of my fridge. I also used fresh tomatoes rather than tinned as when I last went to my supermarket they had run out.

Throughout the day I had a few snacks of carrots and hummus and also a few sweets I had in the back of the cupboard. I hope you’ve been enjoying getting creative with what you’ve got and hope to hear off you all soon. Stay safe!
